No the problem isn't thinking up a new kind of enemy, it's thinking of which existing enemies (as in ones that are in the engine) I could use that would work well together.
Hmm... Well there are Snifits. How about making a specific kind shoot vegetables?
As for Koopas and Goombas (and the ever persistent spear guys) recolors are out of the question. Are there any sort of Mining Chuck enemies that you could make utilize veggies as well?
Can't you make some sort of global variable like (radish road) and and object with it so it can make them act (the enemies) differently? Oh, and as for what's shown I really like the concept.
