Also, I see the design change less as an act of laziness and more as an act of... consistency? The original game was released during a period where most of the recurring Mario cast hadn't been "locked" to their current designs yet (some of them even changing appearance almost every other game, what with Koopas walking on fours in one game and standing upright in another). As such, was the only game in the series to apply AlphaDream's Tomato Adventure-esque quirks to how mainstay Mario enemies were drawn. The devs probably saw it fit to keep them uniform with their later "on-model" looks for this remake.
I don't mind it too much myself, as I think the game looks gorgeous- but I see where you're coming from.
