Well, considering that he can break bricks with his fist, smash sturdy wooden crates with his hiney, jump 16 feet into the air, pick up and throw monsters four times his own size dozens of meters, and sometimes shoot fireballs out of his hands, I'd say he'd be a...pretty good match for just about anyone, actually.
The only real weakness that he has is his relative fragility, but even then, that's only a mechanic in the 2D games; in 3D games, he can take all sorts of inhuman punishment and then instantly heal his injuries by picking up spare change that he finds lying around. If we're going to go by the one-or-two-hits-and-he's-dead rule, though, and we assume that he doesn't get any power-ups for the sake of fair play, I suppose it would come down to who got the first hit in.
As for me, I'm pretty sure that my delicious meaty filling would spray out all over the place like a stomped jelly donut if Mario hit me with any one of his attacks. I mean I'm not necessarily a super-wimpy guy, but I'm definitely nowhere near as durable as a solid block of bricks or an anthropomorphic Galapagos tortoise.
