EDIT- Another idea would be to use your second theme idea which would be, if I'm understanding what you wrote, to take a Paper Mario exclusive character/creature and sprite it like it was from another game. This would also be interesting as it would require the spriter to remove the paper qualities from the subject. For example, making Mimi (from SPM) not have such a blockish head and stick arms.
I may do the second one, so it'll be easier for new-ish spriters.
